Macaroni and Cheese- Version 1
Ingredients
8 oz macaroni
16 oz cottage cheese
1 cup shredded cheddar cheese
2 cups milk
2 tbsp flour
pinch of nutmeg.
Instructions
1. Preheat oven to 375 degrees.
2. Cook pasta.
3. Process cottage cheese until smooth.
4. Heat flour and 1/4 cup milk in saucepan. Whisk in remaining milk. Cook over medium heat, bringing to a boil. Move off heat. Stir in cottage cheese annd cheddar cheeese. Add pinch of nutmeg.
5. Pour sauce over macaroni. Bake 20 minutes. Broil 2-3 minutes
Macaroni and Cheese- Version 2
Ingredients
8 oz penne
1 cup cottage cheese
1.5 cups shredded cheddar cheese
1 cup yogurt
1/2 cup milk
1/2 tsp ground mustard
1/2 tsp garlic powder
Instructions
1. Preheat oven to 350 degreese.
2. Cook pasta. Mix in cheddar cheese to warm pasta.
3. Add yogurt, cottage cheese, milk, and spices.
4. Bake for 30 minutes.

Note: Tastes extremely rich
Macaroni and Cheese- Version 3
Yield: 4 servings
Ingredients
8 oz macarnoi
16 oz silken tofu
1/2 cup evaporated milk
8 oz cheddar cheese (Next time, try reducing it to 6 oz, because I don't think it was all needed)
salt
Instructions
1. Cook macaroni.
2. Blend tofu and milk. Season with salt. Pour into pan. Cook until bubbly. Add cheese and macaroni. Cook 3-5 minutes.
Notes: Yes. Looked a bit lumpy but tasted really cheesy.Sort of like velveta cheese flavor. Another dimension of flavor might be a nice touch
