Mango Macaroons

These mango macaroons have lots of mango flavor!

Yield: 6 macaroons

 

Ingredients

6 tbsp dried mango

1 tbsp almonds, soaked overnight

6 tbsp unsweetened coconut

3/8 tsp coconut flour

1/8 tsp vanilla

 

Instructions

1. Soak mango 3-4 minutes.

2. Place almonds, 1/4 cup coconut, coconut flour, vanilla, and salt in food processor.

3. Add mango, pressing out excess liquid

4. Chill 1 hour

5. Toast 2 tbsp coconut at 300 degrees for 3-5 minutes.

6. Roll mixture into macaroons. Roll in coconut.
