Mashed Plantains

If you like plantains, you'll love this Mexican-inspired side dish.

Ingredients

2 fully ripe plantains

1/2 tsp coarse salt

pinch cayenne pepper

juice of 1/2 lime

 

Instructions

1. Preheat oven to 375 degrees.

2. Peel plantains. Cut in half. Sprinkle with salt and pepper. Arrange cut side down on baking sheet.

3. Roast 20 minutes. Flip. Roast 10 minutes more.

4. Mash until smooth. Drizzle with lime juice.

Notes: The plantains are a little hard to mash after roasting, because they begin to crisp up.
