Meatballs

These meatballs are packed full of vegetables.

Yields: 36 meatballs

 

Ingredients

1 pound beef, ground

1/2 cup applesauce or cooked sweet potato

1 egg

1 zucchini, shredded

2 carrots, shredded (zucchini and carrots can be upto 3 cups)

12 oz frozen spinach, defrosted (or less)

1/2 cup tomato sauce

1/2 cup plain breadcrumbs

1 tbsp parsley

1 tbsp basil

1/2 tbsp oregano

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp pepper

 

Instructions

1. Puree ingredients together. Shape into balls.

2. Bake for 10-20 minutes at 450 degrees. Flip. Bake 10 minutes more.

Notes: Maybe has a tad too much of the herby spices.
