Mediterrean Hummus Bowls

You'll love these customizable Mediterrean bowls.

Ingredients

Base

Greens

Quinoa

 

Greek Salad (4 servings)- has a generous amount of dressing, but tastes good

2 medium tomatoes

1.5 cups cucumber

1 cup diced green pepper (I omitted because I didn't have any)

1/3 cup red onion

1/4 cup pitted Kalamata olives (tastes good even without these)

1/2 cup feta (I omitted because I am trying to avoid cheese)

3 tbsp olive oil

1 tbsp lemon juice

1 tbsp red wine vinegar

1 tsp dried oregano

1/4 tsp salt

 

Quinoa Salad (4 servings)- optional, not as good as the Greek Salad

1/2 cup uncooked quinoa, cooked

6 tbsp red onion

1/4 cup Kalamata olives (quantity is approximate)

1.5 cups cucumber

1-1.5 cups tomato

1-1.5 cups diced yellow bell pepper (I didn't have any)

Dressing 1.5 tbsp oil, 1.5 tsp lemon juice, 1.5 tsp red wine vinegar, 1/12 tsp oregano, 1/8 tsp salt, 1/8 tsp pepper

 

Toppings

Hummus

Pickled Red Onions (optional)

Cucumber, Cherry Tomatoes (If not making Greek Salad)

Lettuce (optional)

Crispy Chickpeas (I recommend something crispy)

Falafel

Chicken Shawarma (if not using crispy chickpeas)

Yogurt Tahini Sauce (if not using hummus)

1. Combine ingredients and enjoy!
