Licorice Meringues

These meringue cookies taste just like licorice.

Yield: ~12

 

Ingredients

3 egg whites

1/4 tsp arrowroot (or 3/8 tsp cornstarch)

1/4 tsp anise extract

1/4 cup dates (~6)

 

Instructions

1. Preheat oven to 200 degrees.

2. Whisk egg, arrowroot, and extract. Beat to firm peaks. Add dates.

3. Pipe onto baking sheet.

3. Bake 2 hours. Turn off oven. Let rest in oven for 30 minutes.

Notes: These are better than the sweet potato/pumpkin ones, but they both stuck to the pan.

These meringues are sweet and have the perfect amount of spcie

Makes ~12-15

 

Ingredients

3 egg whites

1/4 tsp arrowroot (or 3/8 tsp cornstarch)

1/4 tsp pumpkin pie spice

1/4 cup dates (~6), or less since it was very sweet

2 tbsp pumpkin (I used sweet potato)

 

Instructions

1. Preheat oven to 200 degrees.

2. Whisk egg, arrowroot, and pumpkin pie spice. Beat to firm peaks. Add dates and pumpkin.

3. Bake 2 hours. Turn off oven. Let rest in oven for 30 minutes.

Notes: Very sweet when I used sweet potato. I would try making it with three quarters of the dates next time (half wasn't enough). Delish!
