Mini Powdered Donuts

In this recipe, freeze dried fruit is used to give these donuts a sugary coating.

Yield: ~8 mini donuts

 

Ingredients

1.25 cups oat flour

~192g dates (experiment with using less)

1/2 cup milk

1 tsp baking powder

1 tsp baking soda

1 tsp lemon juice

1 tsp vanilla

1 tbsp cornstarch

freeze-dried fruit for coating (opt)

 

Instructions

1. Preheat oven to 350 degrees

2. Blend dates and milk in blender.

3. Add wet to dry.

4. Spoon batter into muffin pan. Bake 10 minutes.

5. Dip in crushed freeze-dried fruit (optional).

 

Inspired by Feasting on Fruit

 

Notes: Taste sweet even without the powdered coating. I used 2 freeze-dried bananas to coat each donut.
