Mint Chocolate Cookies
The flavor of these cookies is similar to thin mints, but the texture is chewy.
Yield: ~16-20 cookies
Ingredients
1 cup flour
~24 dates
1/2 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (I only used half this amount)
1/2 cup applesauce or mashed banana
1/4 cup coconut oil
1/4 cup milk
1-2 tsp peppermint extract (I used 1 tsp, but the original recipe called for 2 tsp vanilla extract)
Instructions
1. Preheat oven to 375 degrees.
2. Add wet ingredients to dry ingredients.
3. Bake ~20 minutes if cooking on thick baking mat

87 calories, 3.2g fat, 14.2g carbs, 1.9g fiber, 7.7g sugar, 1.5g protein
Notes: Cookies rise a bit. Flavor is great. Texture isn't great if you cook them for too short a time period.
Notes 2: These taste equally good made with applesauce and mashed bananas. These might taste even better with ice cream in the middle.
