Mint-Marinated Lamb

Fresh mint imparts a freshness to this dish.

Ingredients

2 onions

1 cup cilantro leaves with tender stems

1 cup parsley leaves with tender stems

1 cup mint leaves

1 tbsp cumin

1 tbsp paprika

2 tsp allspice

1 tsp crushed red pepper flakes

1 tsp ras-el-hanout or garam masala

kosher salt

24 lamb rib chops (about 5 pounds)

2 medium onions, quartered

 

Instructions

1. Pulse onions, cilantro, parsley, mint, cumin, paprika, allspice, red pepper flakes, and ras-el-hanout in a food processor. Season with salt.

2. Rub spice mixture on lamb. Cover and chill for at least 2 hours (up to 12 hours).

3. Grill 3 minutes per side.
