Morning Glory Muffins
Apples help naturally sweeten this muffin recipe, and walnuts add the perfect crunch on top.
Yields: ~8 muffins
Ingredients
1 cup flour
9 dates (I used 6)
1.5 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup carrots
1/2 apple (I used 1 cup)
1/4 cup raisins
1 egg
1/4 cup apple butter
2 tbsp oil
1.5 tsp vanilla
5 tsp walnuts
3 tsp toasted wheat germ (I omitted)
Instructions
1. Preheat oven to 375 degrees.
2. Mix dry ingredients.
3. Add carrots, apples, and raisins.
4. Add wet to dry.
5. Pour into muffin tins.
6. Sprinkle walnuts and wheat germ on top.
7. Bake 20-25 minutes.

Notes: Maybe a bit too moist. Don't use any more carrots/apples. Walnuts add a very nice crunch.
