Moroccan Beef with Apricots

This dish has a complex, subtly sweet flavor from the orange juice and apricots.

Ingredients

1 pound beef, cubed

1 onion

1 cup stock

1/3 cup orange juice

1/3 can diced tomatoes

1/3 cup apricots

3 prunes

1 tbsp cinnamon

1 tbsp cumin

1 tbsp coriander

1 tsp tumeric

1 tsp ginger

 

Instructions

1. Saute onion. Add 1/2 of spice mixture. Brown beef on all sides. Pour in stock, orange juice, canned tomatoes, and prunes. Broil to a boil. Reduce heat and cover. Cook ~3 hours. When tender, add other half of spice mixture. Stir in apricots. Simmer, uncovered, for 3o minutes.
