Moussaka with Cauliflower Bechamel

The cauliflower bechamel sauce makes this dish taste rich and creamy

Yields: 6 servings

 

Ingredients

1 onion

3 cloves garlic

1 pound beef

3 carrots

2 cans tomatoes

4 small eggplant

Bechamel Sauce:

1 head cauliflower

12 tbsp stock

12 tbsp milk

3 cloves garlic

salt, pepper

2 cups grated Parmesan cheese

 

Instructions

1. Saute onion. Add garlic. Add ground beef. Brown. Add tomatoes and carrots. Cook 1 hour (adding water as needed).

2. Bake eggplant for 10 minutes at 375 degrees.

3. Cook cauliflower florets until tender. Blend with stock and milk.

4. Layer beef > parmesan > eggplant > bechamel > parmesan

5. Bake 30 minutes at 350 degrees.

Notes: Try cooking the beef less than 1 hour. I'm not sure that amount of time was needed.
