Oat Bran Brownies

These brownies taste great, and they are a great source of fiber--thanks to the oat bran.

Servings: ~9

 

Ingredients

1 cup oat bran

1/3 cup cocoa powder

9-10.5 dates (I used 9, and they were just a tad bitter at first. 12 was sweeter than it needs to be. Try 10.5 next time.)

3/4 cup mashed banana

3 egg whites

1 tsp vanilla

1/4 cup walnuts

 

Instructions

1. Combine ingredients.

2. Pour into baking pan lined with parment. (I didn't use parchment last time, but it sticked. So, I recommend using parchment next time.)

2. Bake at 325 degrees for 25-30 minutes.

Notes: The walnuts are a necessary addition and bring these to the next level. The original recipe called for much more sugar, but that amount is not necessary. I actually used egg whites as called for in the recipe and have not yet tried using whole eggs.
