Oat Quickbread with Sunflower Seeds and Flax
This bread is quick to throw together and subtly sweet
Yield: 4 mini loafs (~16 servings)
Ingredients
2 cups oats
2 cups flour
4 tsp baking powder
1 tsp salt
1 tbsp flaxseed meal
2 cups milk
4 oz applesauce
1/2 cup sunflower seeds
Instructions
1. Preheat oven to 450 degrees. Lightly oil loaf pan or pie plate.
2. Stir wet mixture into dry.
3. Pour batter into pan and bake 25-45 minutes.
Inspired by One Green Planet
Note: If you don't cook it long enough, it will be mushy inside. I liked the subtle sweetness of the applesauce.
