Omelette

This omelette with sauteed onions, peppers, and tomatoes is a nutritious and delicious way to start the day

Ingredients for Veggie Omelette

1/4 onion

1/2 bell pepper or 1/2 portobello mushroom or 1 cup frozen spinach, defrosted

1 roma tomato

2 eggs

3-4 pinches salt

Ingredients for Greek Omelette (actually holds together)

2 tbsp red onion

6 tbsp tomatoes (I increased. Original recipe only called for 2 tbsp)

1 cup fresh spinach

1/4 cup feta, divided (2 tbsp for inside of omelette and 2 tbsp for the center before you fold it)

1/2 tsp fresh garlic (optional)

 

Instructions

1. Saute onions. Add bell pepper. Saute. Add tomato.

2. Beat eggs, salt, and water. Add to pan. Cook.

199 calories, 9g fat, 14.8g carbs, 2.4g fiber, 8.7g sugar, 13.75g protein

 

Notes: You can optionally add 1 tsp pesto.
