Orange Cake

This orange cake has a light and fluffy texture--especially when warm from the oven.

Yield: 8 muffins

 

Ingredients

1 cup flour

1/2 tsp baking powder

1/2 tsp baking soda

pinch salt

1 cup orange juice

1/2 cup dates

1/4 cup oil

2 tsp orange zest

1 tbsp cornstarch

 

Instructions

1. Preheat oven to 350 degrees.

2. Sieve dry ingredients.

3. Combine dates and oil. Add orange juice. Add dry mixture and zest.

4. Bake 30-35 minutes

 

Notes: Lotes of orange flavor, but must eat cold. Mushy when warm.
