Orange Salmon
Try this salmon topped with a sweet orange reduction.
Ingredients
1 tsp fennel seed
1 tsp olive oil
4 4 oz salmon
1/2 tsp salt
1 cup orange juice
Instructions
1. Cook fennel in oil for 2 minutes.
2. Sprinkle salmon with salt. Add to skillet. Top with orange juice. Bring to a boil.
3. Reduce heat. Cover and simmer 8-12 minutes.
4. Remove salmon. Simmer sauce, uncovered, 6-9 minutes to reduce.

Notes: The salmon looks and tastes dull without the orange reduction. The orange reduction is extremely sweet. Adding another dimension to the dish might improve the flavor. You can't taste the fennel.
