Pea Soup

 

Ingredients

1 onion

6 cups peas

1 stalk celery

4 cups broth

1/2 cup water

1/2 tsp salt

thyme, parsley

pepper

 

Instructions

1. Cook onion and celery until softened (4-6 minutes). Add thyme or parsley.

2. Stir in peas. Add broth and water. Bring to simmer. Cook until tender (1 minute).

3. Puree in batches.
