The peaches and coconut milk give this chicken salad a tropical twist.
Ingredients
2 cups cooked chicken breast
1 cup peaches
1/4 cup raisins
1/4 cup walnuts
1/4 cup chives or green onions
5-7 mint leaves
handful of parsley
1/4 cup full-fat coconut milk
1/2 tsp lime juice
1/4 tsp sea salt
Instructions
1. Combine chicken through parlsey.
2. Mix coconut milk, lime juice, and salt. Toss with chicken mixture.
