Peanut Butter and Jelly Pie

This dessert is inspired by peanut butter and jelly.

Yield: ~12 mini muffins

 

Ingredients

Base:

1/3 cup dates (~8), not pre-soaked so that crust will have some texture

1/3 cup almonds

1/3 cup oats

1/3 tsp vanilla

Filling:

1/2 cup peanut butter

3/4 cup dates (~18)

1 tsp vanilla

3/4 cup milk

2 tsp gelatin

Topping:

2-4 cups strawberry jam

 

Instructions

1. Blend crust ingredients. Press into muffin liner.

2. Blend peanut butter, dates, vanilla, and 1/4 cup milk.

3. Bring remaining milk to a boil. Add gelatin. Simmer 3 minutes. Blend with other liquid ingredients.

4. Make jam with berries. Spread on top.

5. Refrigerate. Enjoy!

Notes: Original recipe called for gelatin in topping mixture too, but I didn't like the consistency that gave it.
