Pecan Pie

The secret to this pecan pie is the oatmeal, which adds heartiness to the filling.

Yield: 12 mini muffin tins

 

Ingredients

Filling

2 cups dates (Try using way less next time, because was too sweet. Maybe try 1 cup)

2/3 cup oats

1/2 cup pecans

1 tsp vanilla

2 eggs + 2 egg whites

 

Instructions

1. Pour ingredients into pie crust (optional).

2. Bake at 325 degrees for 20-30 minutes in mini muffin tins, or 50 minutes for full pie (until toothpick comes out clean).

Note: I'm pretty sure this is the winning pecan try, even though I did not try all variations together. Can taste the vanilla. Too sweet.

Pecan Pie

If you like pecan pie, try this healthier version made with dates!

Ingredients

Filling

2 cups dates

1 cup milk

3 tbsp flaxseed meal

3 cups pecans

 

Instructions:

1. Make crust

2. Preheat oven to 350 degrees.

3. Blend dates and milk. Add flaxseed meal and pecans.

4. Bake <30 minutes. (original recipe called for 30 minues, but that was too long)

Note: I originally used 4 cups of pecans, but it was a bit too much. I wrote down this recipe awhile after making it, so I might have forgotten some parts. I forgot the porportion of crust to filling. I used a crust recipe from somewhere else on my recipe page.

Pecan Pie (with Tofu)

This twist on pecan pie uses tofu, but you would never guess it.

Servings: 16 mini muffin tins

 

Ingredients

Filling

6 oz extra firm tofu

1/4 cup milk

1.5 cups dates

1.5-2 cups pecans

2 tbsp cornstarch

1 tsp vanilla

1/4 tsp salt

 

Instructions:

1. Preheat oven to 350 degrees.

2. Puree all ingredients except pecans. Stir in pecans.

3. Bake <1 hour if baking in muffin tins (otherwise it will burn).

Pecan Pie Bars

If you like pecan pie, give these bars a try.

Servings: 8 servings

 

Ingredients

Filling

16 dates

2 eggs

1/2 tsp vanilla

1 cup pecans

Crust

1.75 cups almond flour

1 egg

1 tbsp coconut oil

1/2 tsp arrowroot powder

1/4 tsp sea salt

 

Instructions:

1. Bake crust at 350 degrees for 15 minutes.

2. Pour filling on top. Sprinkle with pecan. Bake 25-30 minutes.

3. Let cool before cutting. Enjoy!

Pecan Pie

This pecan pie is made with tofu.

Servings: 10-12 mini cupcake molds

 

Ingredients

12.3 oz silken-firm tofu

1/3 cup milk (I used this to help with blending, but it was not called for in the original recipe)

1 cup pecans

2 tsp vanilla

1/4 tsp salt

2 tsp cornstarch

10 tbsp dates

 

Instructions:

1. Blend all ingredients except pecans. Add pecans.

2. Pour into pie crust.

3. Bake at 350 degrees for upto 45 minutes. (45 minutes is a bit too much.)

Notes: Original recipe called for 2 tbsp cocoa powder. I think it would be better if you omit that, although I never tried it quite this way.
