Penne Alla "Not-ka"

 

Ingredients

8 oz penne

14 oz canned tomatoes

6 tbsp evaporated nonfat milk

1/4 cup heavy cream

1/4-1/3 cup Parmesan cheese

1/4 cup shredded fresh basil

1/2 cup chopped red onion

3 cloves garlic

3/4 tsp salt

1/8 tsp black pepper

pinch red pepper flakes

 

Instructions

1. Cook pasta al dente (6 minutes). Reserve 1/2 cup pasta water.

2. Saute onion and garlic. Season with 1/4 tsp salt. Add tomato, 1/2 tsp salt, and red pepper flakes. Simmer 10 minutes. Stir in cream and evaporated milk. Simmer 1 minute more.

3. Add pasta to sauce. Stir in Parmesan cheese, fresh basil, and black pepper.
