Pickled Red Onions

These red onions are great on salads, tacos, and more.

Ingredients

1 red onion (mine was ~160 grams)

3/4 cup vinegar (I like white wine vinegar or 1/2 cup apple cider vinegar and 1/4 cup lime juice)

1.5 tsp salt (can try reducing to 1 tsp if you want)

 

Instructions

1. Slice onions with mandolin

2. Pour boiling water through onions in a sieve.

3. Mix vinegar and salt. Pour over onions in bowl.

4. Let stand for 1 hour and then place in fridge.
