Pineapple Cake

If you like pineapple, try out this delicous cake.

Servings: ~16 muffins

 

Ingredients

1.75 cups flour

1/2 tsp baking soda

1/4 tsp salt

1.5 cups chopped pineapple, divided

1 tbsp water or pineapple juice

12 dates, mashed

3 tbsp  coconut oil

1 tsp vanilla

2 eggs

 

Instructions

1. Preheat oven to 350 degrees.

2. Pulse half of the pineapple with water. Add dates. Blend. Add coconut oil and vanilla. Add eggs.

3. Finely chop remaining pineapple and fold it in.

4. Add wet to dry.

5. Bake 30-35 minutes for cake and ~25 minutes for muffins.
