Pistachio Cake

This pistachio cake has a great texture.

Ingredients

1.5 cups flour

1 cup pistachios, ground into flour

2 tbsp lemon zest

1 tsp baking soda

1/2 tsp sea salt

1/2 cup olive oil

1/2 cup dates

1/4 cup milk

3 eggs

 

Instructions

1. Preheat oven to 350 degrees.

2. To make pistachio flour, pulse -> sieve -> pulse. Do not over pulse to form butter.

2. Pour wet into dry.

3. Bake 20-22 minutes.
