Pistachio Ice Cream
If you like pistachios, give this ice cream recipe a try.
Yield: ~4 servings of approximately 2 scoops each
Ingredients
1.5 cups coconut milk (I used full-fat)
1 cup milk
2.67 tbsp honey (original recipe called for 4, but tasted good with less... If using dates, I recommend using 12-16. I used 8 and it wasn't particularly sweet.)
1/2 tsp almond extract (I didn't add this)
1 cup pistachios for blending plus 1/2 cup for topping (some recipes call for as much as 3 cups)
Instructions
1. Rinse salt off pistachios.
2. Blend ingredients and pour into ice cream maker.

Notes: In between soft serve and ice cream consistency. Pistachio flavor isn't very strong but is decipherable.
Next Time: Great consistency and flavor. Try sweetening with dates instead of honey. Try changing the ratio of coconut milk and regular milk so that it is 1:1.
Next Time: I used lite coconut milk and dates. It was good. However, I'm not sure how it would have compared to full fat coconut milk. It sticks to ice cream bowl.
Pistachio Ice Cream
Avocado adds a velvety smooth texture to this ice cream. It even tastes good before freezing and served as a mousse.
Yield: 6-8 scoops
Ingredients
3/4 cup coconut water or milk (I used almond milk)
1/8 cup cashews, soaked
1 avocado
1/2 small banana
1 handful of spinach (I omitted)
8 dates
1 tsp vanilla
1/4 tsp almond extract
1/8 tsp salt (I omitted)
6 tbsp raw pistachios
Instructions
1. Blend everything together except pistachios.
2. Pour into ice cream maker. Sprinkle with pistachios. Enjoy!
For instant ice cream, try swapping 1/4 cup of the milk for ice cubes and a frozen banana.

Notes: Great flavor! I froze directly rather than pouring into ice cream maker. (Even tasted good before freezing--velvety smooth, light consistency like pistachio mousse.) It was icy when frozen. Amazed that the base tasted like pistachio--even when there were no pistachios in it. Once in awhile I would taste a hint of avocado, and it was off-putting.
Pistachio Ice Cream
Avocados and banana form the base of this delicious ice cream.
Ingredients
2 frozen bananas
1/2 avocado
1/4 tsp almond extract
1/4 cup pistachios for topping
Instructions
1. Blend everything together except pistachios.
2. Serve with crushed pistachios on top.

Notes: Tastes terrible before adding almond extract and great afterwards. Tastes good although it doesn't look appetizing.
