Pomegranate Chili

The pomegranate juice counterbalances the spicy-ness of the chili in this recipe.

Servings: 4-5

 

Ingredients

1 cup pomegranate juice

1/3 cup pomegranate seeds

1.5 cups onion

1 cup bell pepper

1-2 chipotle chilies in adobo (I recommend using 1, because it is pretty spicy with 2)

2 cloves garlic

3 cups broth

3 cups cooked beans

6 oz tomato paste

1/2 tsp allspice

1 bay leaf

2.5 cups shredded turkey or chicken

 

Instructions

1. Saute onion, bell pepper, chilies, and garlic.

2. Stir in broth and pomegranate juice. Emerse pomegranate seeds wrapped in cheesecloth.

3. Stir in beans, tomato paste, and seasonings. Bring to a boil.

4. Cover and simmer 1 hhour.

5. Remove bay leaf.

6. Stir in turkey or chicken. Discard cheesecloth

 

Notes: The sweetness of the pomegranate goes realy well with the spicyness of the chili. I think this would be even better with some corn.
