Pomegranate-Glazed Chicken

This chicken is glazed with a pomegranate and orange sauce.

Ingredients

3-3.5 pounds bone-in chicken breast halves (I used bone-in chicken thigh)

2 cups pomegranate juice

1 cup orange juice

1 tsp rosemary

3 garlic cloves, smashed

2 tsp red-wine vinegar

 

Instructions

1. Preheat oven to 425 degrees.

2. In skillet, combine glaze ingredients with pinch of salt and pepper. Boil until reduced to ~1/2 cup. Stir in vinegar. Reserve some for serving.

3. Season chicken with salt and pper.

4. Bake in casserole dish (prefered over baking sheet) for 15 minutes. Brush with glaze. Continue baking, brushing with glaze every 5 minutes, until cooked through (15-20 minutes).

Notes: I put the glaze on right away before baking (by mistake). It still came out good. It takes quite a bit of pomegranate and orange juice to make.
