Poptarts (Flakey-ist Crust Yet)
This crust is super flakey but uses coconut oil instead of butter for a healthier twist.
Yields: 8 poptarts
Ingredients
Crust
2 cups flour
1/2 cup cold coconut oil
3 tbsp greek yogurt
3 tbsp milk
3 dates
1/2 tsp salt
Filling
~1 cup apple butter (or 5 tsp per poptart)
Instructions
1. Mix coconut oil, dates, yogurt, and vanilla. Slowly add dry ingredients.
2. Refrigerate. (I skipped this step)
3. Bake 15-20 minutes at 350 degrees.

Yields: 2 poptarts (Approximately 3 x 5 inches each with approximately 1 tbsp filling)
Ingredients

11 tbsp flour (I used less than this by accident)
1/4 tsp salt
2.5 tbsp honey (I used date soaking liquid)
3/4 tsp vanilla
2 tbsp coconut oil
Filling
5 tsp apple butter or jam
Instructions
1. Mix wet into dry.
2. Chill 20 minutes.
3. Bake 14-18 minutes at 350 degrees.
