Potato Leek Soup

If you have extra leeks, try making this lighter, brothy soup.

Ingredients

3 leeks

2 onions

2 carrots

2 stalks celery

2 cloves garlic

8 cups chicken broth

1 pound white potatoes

salt, pepper

 

Instructions

1. Saute leeks, onions, carrots, celery, and garlic. Partially cover and cook until tender (10 minutes).

2. Heat broth until boiling. Add potatoes and vegetables. Return to boil. Simmer with the lid on for 10 minutes.

3. Remove from heat and season to taste. Enjoy!
