(Pressure Cooker) Chicken Marsala

The marsala sauce is full of flavor.

Ingredients

4 8 oz chicken breasts

1.25 tsp salt

3/4 tsp pepper

1 cup onion

1 sprig fresh thyme plus 2 tsp fresh leaves

12 oz mushrooms

2-3 cloves garlic

3 tbsp flour

3/4 cup marsala

1-1.5 cups stock (originally recipe called for 1.5 cups, but that might be a bit too much)

 

Instructions

1. Season chicken with salt and pepper. Brown chicken. Remove.

2. Saute onion and thyme sprig. Cook until soft (~3 minutes). Add mushrooms. Cook 5 minutes (to brown). Add garlic. Add flour. Cook 2 minutes. Add Marsala. Simmer 3 minutes. Add stock.

3. Return chicken to pot just to warm.

4. Stir in thyme leaves.

Note: The sauce was good, but the chicken was dry. I think browning the chicken practically cooked it.
