Pressure Cooker Satay Chicken

This satay chicken has an exotic flavor and is very juicy.

Ingredients

1/2 cup coconut milk

1 tbsp fish sauce

2 tsp red curry paste

1/2 tsp tumeric

1/2 tsp pepper

1/2 tsp ginger

1 pound chicken tenders

1/2 cup ground peanuts (optional)

 

Instructions

1. Put all ingredients except peanuts in pressure cooker.

2. Cook 4 minutes.

3. Quick release.

4. Simmer uncovered until thickened. Sprinkle with ground peanuts.

 

Note: so juicy that it tastes like chicken thigh, great flavor. I'm not sure if the peanuts are needed on top, I didn't grind them
