Banana Walnut Steel Cut Oats
The banana melts into this steel cut oat recipe.
Ingredients
2 cups steel cut oats
4 bananas, sliced
4 cups water
1 tbsp cinnamon
1 tsp ginger
1/2 tsp nutmeg (I recommend omitting)
Topping: berries, walnuts
Instructions
1. Add ingredients to pressure cooker and set timer for 5 minutes.
2. Natural release after about 10 minutes.

Banana Custard Steel Cut Oats
This oat dish is so delicious it almost tastes like dessert. A personal favorite.
Yield: 4 ramekins
Ingredients
1/2 cup steel cut oats
1/2 + 1/3 cup milk
1 banana, mashed
1/2 cup sliced bananas
1/6 cup dates
1/6 cup walnuts
1 egg
3/4 tsp cinnamon
1/2 tsp baking powder
1/2 tsp vanilla
1/4 tsp nutmeg
1/8 tsp salt
Instructions
1. Lightly spray ramekins. Add all ingredients.
2. Add 1.5 cups water to the bottom of the pressure cooker
3. Cook on high pressure for 40 minutes. Natural release.

Apple Steel Cut Oats
This steel cut oat recipe is flavored with apples, applesauce and spices.
Ingredients
1/4 cup steel cut oats
3/4 cup water
2 tbsp applesauce
1/4 tsp cinnamon
1/8 tsp nutmeg
1/32 tsp salt (I halved what the original recipe called for because it seemed like a lot)
2 tbsp raisins (just the right amount--don't use any less)
1/4 apple (add at the end)
Instructions
1. Add ingredients (except apple) to pressure cooker and set timer for 10 minutes.
2. Natural release after about 10 minutes.
Notes: I'm not sure if these notes goes with this recipe, but it says to use more raisins and spices, fewer apples, and to cook the apples
Apple Cinnamon Steel Cut Oats
This steel cut oat recipe is especially creamy from the milk.
Ingredients
1 cup steel cut oats
1.5 cups water or almond milk (I used almond milk)
1 cup apple juice
2.5 cups diced apple
1/4 cup chopped pecans
1/2-3/4 tsp cinnamon
1/8 tsp pumpkin spice blend
pinch salt
Instructions
1. Reserve 1 cup apples for topping the oats.
2. Add remaining ingredients to pressure cooker (except pecans). Cook 10 minutes. Slow release.
3. Top with pecans and reserved apples.

Notes: Delish, Creamy from the milk, Can't taste spices. I doubled the apple topping and halved the pecans from the original recipe. I also skipped the step of sauteeing the apples.
