Pumpkin Pie Pudding

This pumpkin pie pudding has a more traditional pudding texture.

Yield: 4 servings

 

Ingredients

2 cups milk

1 cup pumpkin

16 dates

1/4 cup cornstarch

2 eggs

1 tsp pumpkin pie spice

1/4 tsp salt (opt)

 

Instructions

1. Whisk milk, dates, and cornstarch in saucepan. Bring to boil. Boil 3 minutes, whisking constantly.

2. Beat eggs. Gradually add half the hot milk. Return milk-egg mixture to pan. Cook over medium heat 3 minutes, or until thick, whisking constantly. Remove from heat. Stir in pumpkin and spices.

3. Chill 30 minutes.
