Pumpkin Seed Coated Chicken Breasts

Pumpkin seeds give this chicken a crunchy coating.

Ingredients

1 cup pumpkin seeds, coarsely chopped (I used sunflower seeds)

1/2 tsp chili powder

2-3 tbsp flour

2 eggs (perfect amount)

4 chicken breasts (5-7 oz each)

 

Instructions

1. Combine seeds, chili powder, and 1/8 tsp salt (make sure to use all of the salt).

2. Combine eggs with salt and pepper.

3. Dip chicken in flour, then eggs, and then seeds.

4. Bake at 400 degrees for 15 minutes, flipping after the first 10 minutes.
