Quinoa Burrito Bowl

The spectrum of flavors in this Mexican-inspired burrito bowl is extremelly satisfying.

Yields: ~8 servings

 

Ingredients

1 cup uncooked quinoa

15 oz black beans

1.5-3 cups corn

1.5 cups diced tomatoes with jalapeno

2 bell peppers

1 red onion

2-3 cloves garlic

1/2 tsp cumin

1/4 tsp cayenne

2 tbsp cilantro

salt, pepper

lettuce, tomatoes, and avocado (opt)

 

Instructions

1. Saute peppers, onion, and 1-2 cloves garlic until they begin to soften (4-5 minutes). Season with salt and pepper.

2. Cook quinoa. Toss in cilantro.

3. Combine corn, cayenne, salt, and pepper.

4. Mix together black beans, cumin, and one garlic clove.

5. Combine all ingredients.

Notes: Comment from first attempt- The diced tomatoes with jalapeno is essential. I ate it with lettuce, tomatoes, and avocado. Comment from second attempt- The green pepper and corn taste so good and go really well together.

Vegetables, beans, and salsa jazz up quinoa in this Mexican-inspired dish.

Yield: 4 servings

 

Ingredients

1/2 cup uncooked quinoa

1.5 cups corn

1.5 cups black beans

1.5 cups cherry tomatoes (or cut tomatoes)

3/4 cup red onion (reduced from 1 cup)

1 jalapeno (not really needed because there is salsa already)

1 cup salsa

3/4 tsp cumin

1/2 avocado, mashed

 

Instructions

1. Layer ingredients in bowl. Enjoy!

Notes: I like this version better than the other version. Original recipe was for Southwestern Stuffed Peppers, but I like it as a quinoa bowl better
