Quinoa Crusted Tofu

Quinoa creates a crispy crust in this tofu dish.
Ingredients
6 oz tofu
1/3 cup pre-cooked quinoa
Sauce (Try to use a different recipe; don't need this much; can use way less)
1 tbsp mustard
1 tbsp hot sauce
1 tsp honey
1 tbsp olive oil
2 tbsp coconut milk (or other milk)
Instructions
1. Cut tofu into cubes.
2. Drain tofu on paper towels for 10-15minutes.
3. Mix sauce ingredients
4. Dip tofu in sauce. Roll in quinoa.
5. Bake for 20 minutes at 450 degrees.

Notes: I don't like the sauce. It tastes like hot sauce and mustard. (I did use the honey, but I used almond milk instead of coconut milk.) I didn't taste the sauce in the final tofu dish though. Also produces way too much sauce. You can probably substitute egg or something else instead of the sauce. I like the quinoa crust. Don't microwave to reheat. Must reheat in the oven.
