Quinoa Fried Rice
Quinoa replaces rice in this protein-packed dish.
Servings: 3-4 servings
Ingredients
1/2 cup uncooked quinoa
1 cup water
3 eggs
1-2 cups onion
2 cloves garlic
1 cup carrots
1 cup peas
1 cup corn
2 cups broccoli (optional- If using, reduce other vegetables by 1 cup)
3 tbsp soy sauce (2 tbsp is probably enough)
1/2 tsp dried ginger (or a tad less)
1/8 tsp black pepper (original recipe called for 1/2 tsp, which was WAY too much)
Instructions
1. Cook quinoa.
2. Scramble eggs.
3. Saute onion, carrots, and garlic. Cook until soft.
4. Add peas and corn.
5. Add quinoa and eggs.
6. Add soy sauce and spices.

Notes: Use large frying pan even if you cut recipe in half.
