Quinoa Mac and Cheese

Quinoa subs for pasta in this cheesy dish.

Servings: ~4

 

Ingredients

1.5 tbsp coconut oil (or a tad less)

3 tbsp flour

2 cups milk

1/4 tsp salt (use full amount)

8 oz cheddar cheese

4 cups cooked quinoa (or 1 cup uncooked)

2 cups tomatoes (optional)

Panko + Parmesan (optional)

 

Instructions

1. Preheat oven to 350 degrees.

2. Add coconut oil and flour to saucepan. Whisk. Whisk in milk. Bring to a boil.

3. Stir in salt and cheese.

4. When cheese is melted, remove from heat. Add quinoa. Add tomatoes, if usining.

5. If desired, transfer to casserole dish, top with Parmesan and bread crumbs. Bake at 450 degrees for 10-30 minutes, or until brown.

Note: Original recipe only called for 3 cups quinoa and 1.5 cups milk. Those amounts made it look cheesy and delicious--maybe even too saucy. So, I increaded the amount of quinoa to 4 cups.
