Quinoa with Orange Zest, Butternut Squash, and Spinach

The orange zest flavor really shines through in this quinoa dish.

Ingredients

1 butternut squash

1 red onion

3-5 cloves garlic

1.5 cups dry quinoa

3 cups fresh spinach

2/3 cups cranberries (optional- I substituted for raisins and they were not necessary)

1/2 cup shelled pistachios (optional- They were not necessary)

zest of an orange

 

Instructions

1. Roast butternut squash, onion, and garlic cloves at 425 degrees for 30 minutes. (I sauteed onion and garlic instead.)

2. Cook quinoa with orange zest. (I added orange zest at the end.)

3. Toss ingredients together. Enjoy!

Notes: Colors are really pretty. Can double the orange zest if you want. The butternut squash tastes really good in here.
