Rice with Kale, Peppers, Onions, and Mushrooms
This rice dish is full of fresh vegetables.
Ingredients
1/2 cup dry rice, cooked
1 cup onion
1 bell pepper
1 cup mushrooms
1-2 cups kale
Feel free to sub some of the vegetables above for tomatoes or zucchini
~3 tbsp tomato paste
1 tsp chili powder
salt, pepper
Instructions
1. Saute onions and peppers.
2. Add kale and mushrooms.
3. Add rice.
4. Add tomato paste and spices.
5. Enjoy!
Loosely inspired by Further Food (original recipe was for stuffed bell peppers).
Notes: This is actually pretty good and really versatile. Use whatever vegetables you have on hand.
