Rice with Vegetables

Amp up your rice with some vegetables using this quick and easy recipe.

Ingredients

1 cup brown rice

2.25 cups water or stock

3-4 cups frozen peas, carrots, and corn

 

Instructions

1. Add rice and water (or stock) to saucepan. Bring to boil. Cover and simmer.

2. Once water is mostly absorbed, add frozen vegetables. Cover and continue to cook until vegetables are cooked through.
