Ricotta Cheese

 

Ingredients

4 cups milk

1 cup buttermilk

1/2 cup heavy cream

3/4 tsp salt

 

Instructions

1. Heat ingredients in saucepan over medium-low heat, stirring occasionally for 10 minutes until reaches 170 degrees.

2. Continue heating, without stirring, until temperature reaches 190 degrees. Remove from heat. Let stand 1 hour (curds and whey will separate). Ladle into cheesecloth lined colander. Leave suspended and let drain for 2 hours.

 

Note: Can be stored 5-7 days.
