Roasted Broccoli with Garlic and Anchovies

This broccoli is very quick to prepare.

Yield: 4-6 servings (~1.5 roasting trays full)

 

Ingredients

1.5 pounds broccoli

4 tsp olive oil

1 tsp lemon juice

2 cloves garlic

4 anchovy fillets

2 tbsp fresh parsley (optional)

 

Instructions

1. Preheat baking sheet in lower-middle position at 500 degrees.

2. Toss broccoli with oil. Season with salt and pepper.

3. Roast 10 minutes, stirring once or twice. (I didn't need to stir)

4. While roasting, saute garlic and anchovies until garlic has lightly browned and anchovies have dissolved.

5. Sprinkle broccoli with lemon juice, anchovies, and garlic. Toss in parsley.

Notes: Tastes really good and quick to make. The only annoyingn part of the recipe is that you have to use a saute pan.

 

Notes: Make sure to preheat pan in oven. Otherwise, you will need to roast 10-15 minutes, flip, and then 3-5 more minutes to brown, and the broccoli will become too soft.
