Roasted Broccolini

Give this easy to prepare side dish a try.

Yield: 4 servings

 

Ingredients

1 bunch broccolini

2 tsp lemon juice

2 tsp olive oil

or

2 tsp balsamic vinegar (I like this better)

2 tsp olive oil

salt, pepper

 

Instructions

1. Roast at 425 degrees for ~15-20 minutes.

(Alternatively, sautee in olive oil for ~10 minutes and then sprinkle with lemon juice.)

Notes: If you sautee it, it will retain its bright green color. If you roast it in the oven, it will not. But I think the roasted version tastes a tad better.
