Roasted Brussel Sprouts and Sweet Potato with Walnuts

The walnuts help to elevate this holiday dish.

Yield: ~3 servings (1 baking sheet)

 

Ingredients

1/2 pound brussel sprouts

1.5 cups sweet potato (~1 sweet potato)

1/2 cup red onion (more would probably be better)

1 tbsp olive oil

1.5 tsp orange juice

1/8 tsp cinnamon

1/4 cup walnuts

1/4 cup dried cranberries

 

Instructions

1. Combine oil, orange juice, and cinnamon. Drizzle of vegetables.

2. Season with salt and pepper.

3. Roast 15 minutes at 400 degrees.

4. Add walnuts. Roast 15 minutes more.

5. Add dried cranberries.

 

Notes: I couldn't taste the OJ or the cinnamon. I would recommend more red onions and I really like the walnuts. I roasted 30 minutes prior to adding the walnuts, but my brussel sprouts started out frozen.
