Roasted Chicken and Grapes

Grapes add sweetness to this delicious chicken dish.

Ingredients

4 bone-in chicken breasts (I used chicken thighs)

1 sweet onion (~2 cups)

4 tbsp fresh rosemary (I used 3/4 tsp dried)

2-3 cups grapes

 

Instructions

1. Preheat oven to 400 degrees.

2. Saute onions. Set aside.

3. Brown chicken.

4. Place onion mixture on bottom of roasting pan. Top with chicken and then grapes. 

5. Season with rosemary.

6. Roast 30 minutes.

7. Remove from oven. Baste with juices.

Notes: I used 4 chicken thighs, 1 cup onion, and 1 cup grapes. I wish I had used more onions and grapes--maybe double of each. The original recipe also used white wine and honey. I omitted both.
