Roasted Zucchini, Green Beans, & Potatoes with Tomatoes

The tomatoes add depth of flavor to this vegetable dish.

Yield: 4 servings, 2 roasting pans full

 

Ingredients

4 zucchini

1 red onion (I used Yellow)

1 pound Yukon Gold potatoes (I used Russet and red potatoes)

1/2 pound green beans

28 oz can tomatoes (doubled from original recipe

4 cloves garlic, sliced (or 1/2 tsp garlic powder)

1 tbsp lemon juice

1 tsp dried oregano

1/4 tsp coarse sea salt

 

Instructions

1. Preheat oven to 450 degrees.

2. Combine all ingredients. Roast 30 minutes. Stir. Roast 15 more miutes.
