Salmon in Tomato Sauce (Stove Version)
This savory dish is a main course and side dish all in one.
Ingredients
4 6 oz salmon
1 onion
28 oz can tomatoes
2 carrots
2 celery
2-4 zucchini
1 potato
1/4 cup fresh parsley (opt- not really needed)
2 scallions (opt)
Instructions
1. Cook onion until carmelized. Add carrots and celery. Cover. Cook until softened. Add zucchini and tomatoes. Cook until reduced (10 minutes).
2. Add potatoes and 1/2 cup water. Partially cover and cook until potatoes are almost tender (8 minutes or more). Stir in parsley.
3. Season salmon with salt and pepper. Nestle in sauce. Cook until opaque (10 minutes).
Notes: The potatoes did not cook all of the way.

Salmon in Tomato Sauce (Oven Version)
This savory dish is a main course and side dish all in one.
Ingredients
6 oz salmon
14 tbsp tomato sauce
12 tbsp water (or less)
1 small potato
1/4-1/2 zucchini
1 carrot (optional, not that good)
1 celery
mushrooms (I didn't use but would probably be tasty)
Instructions
1. Cook the potato.
2. Microwave the carrot and zucchini to cook. (I microwaved for 2 minutes, which didn't up being long enough. You can also cook the veggies in the oven with the tomato sauce before adding the salmon instead.)
3. Combine all ingredients in casserole dish. Bake at 350 degrees for 40 minutes.
Notes: I microwaved the veggies for 2 minutes and then needed to cook them in the oven for another 20 minutes after the salmon was cooked.
