Shiitake Fried Rice

Try this twist on plain rice.

Ingredients

1.5 cups brown rice (not yet cooked)

1 pound shiitake mushroom (I used white button mushrooms)

1 cup edamame

4 scallions

3 cloves garlic

3 tbsp lime juice (You might not need all of this)

2 tbsp soy sauce

 

Instructions

1. Cook rice

2. Cook eggs. Remove from heat.

3. Saute mushrooms, garlic, and ginger.

4. Add rice, eggs, edamame, scallions, lime juice, and soy sauce.

Notes: Original recipe called for 2 eggs, but that didn't add much to the flavor. Original recipe also called for 2 tbsp fresh ginger, but I didn't like the taste that gave.
